Chicken Enchiladas

2 cups diced and cooked chicken
1 can cream of chicken soup
1/2 pint sour cream
1-2 cup shredded cheddar cheese
1 can diced green chilies
1 pkg flour tortillas

Bring to a boil soup, sour cream, 1 cup cheese and chilies. take half of sauce and put it to the side to the rest add chicken and mix. grease bottom of a 9x13 dish. add a 1/4 of the mixture you set aside and add it to the bottom and sides of dish. fill tortillas with the chicken mixture about 2 tablespoons full more or less depending what you like. roll up and put in dish. with remaining 1/4 sauce and add to top of rolled tortillas top with some cheese. bake covered at 350 for 20-25 min.

Homemade Chicken Strips

2-3 chicken breasts cut into strips
2-3 sleeves of rits or town house crackers smashed
1 cube butter melted with salt and pepper to taste

dip the cut up chicken in butter coating all sides, then in crackers coating all sides, put on greased (or something so they don't stick) cookie sheet bake 350 for 20-25 min or until chicken is done.

Stove Top One-Dish Chicken Bake

1 box Stuffing Mix for Chicken
2-3 boneless skinless chicken breasts
1 frozen pkg. of mixed veggies
1 can condensed cream of mushroom soup
1/3 cup sour Cream

cut up and cook chicken, make stuffing as directed on box.
Mix soup and sour cream until well blended add chicken and veggies. Top with stuffing.
cover and bake at 350 for 30-35 min. also buy two box's and add stuffing on bottom. instead of frozen veggies brockley can be added.

Chicken Tetrazzini

1lb spaghetti noodles
2-4 chicken breasts
2 cans of cream of chicken soup
1 can chicken broth
salt and pepper to taste (opt)
cheddar cheese

cook and drain noodles, and cut up and cook chicken. Add noodles and chicken to soup, broth, and cheese. mix all together. cover and bake at 350 for 30-35 min. also you can add cooking cheese on top the last 10-15 min. of cooking.

7up Chicken Marinade

4-5 lbs chicken breast
1 1/2 cup 7up
1/2 cup oil
1/2 cup soy sauce
1 tea garlic powder

add chicken to marinade and marinate for 30 min- 24 hours (24 hours for best results) grill or bake till done.
